Instructions:

  1. Marinate the Chicken: In a large bowl, combine the chicken with the onion, garlic, ginger, garam masala, cumin, coriander, turmeric, red chili powder, yogurt, salt, and kewra water (if using). Mix well and let marinate for at least 30 minutes, or preferably overnight.
  2. Cook the Rice: Drain the soaked rice and set aside. In a pot, bring chicken broth to a boil. Add the rice, salt, and a splash of oil. Reduce heat to low, cover, and simmer until the rice is tender and the liquid is absorbed.

  5. Steam the Biryani: Seal the pot tightly and steam the biryani over low heat for 15-20 minutes, or until the flavors have melded and the rice is perfectly cooked.
  6. Serve: Garnish the biryani with fresh cilantro and serve hot.
