Ingredients:
- 1 kg boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup basmati rice, washed and soaked for 30 minutes
- 1 large onion, finely chopped

- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala

- 1 bay leaf
- 1 stick cinnamon
- 1 cup plain yogurt
- 1/4 cup ghee or clarified butter
- Salt to taste
- Water as needed
Instructions:
- Marinate the Chicken : In a large bowl, combine the chicken pieces with the yogurt, cumin seeds, coriander seeds, red chili powder, garam masala, turmeric powder, cardamom powder, salt, and a splash of water. Mix well to coat the chicken evenly. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.
- Cook the Rice: In a separate pot, bring water to a boil. Add the soaked rice, bay leaf, cinnamon stick, and a pinch of salt. Cook until the rice is tender but not mushy. Drain and set aside.
- Sauté the Aromatics: Heat the ghee or clarified butter in a large pot over medium heat. Add the onions and cook until golden brown. Stir in the garlic and ginger, and cook for another minute until fragrant.
